Cabernet Sauvignon

Variety: 100% Columbia Valley Cabernet Sauvignon. 

Description: Deep garnet color. Ripe red cherry nose with complex spice, smoke, and vanilla notes. Forward fruit on the palate, supported by a substantial structure. Balanced oak and long-lasting fruit on the finish.

This wine shows best when allowed to breath for at least 30 minutes to several hours. The tight structure and age ability of this wine can be attributed to the nature of a 100% Cabernet Sauvignon wine.

Vinification: The grapes were contract crushed in Washington, chilled to 28 F, and delivered to the winery. This 4-6 day long cold-soak extracts color and flavor from the skins of the grapes but extracts very little tannin.



This is one reason our Red wines have great complexity and flavor yet are quite smooth and approachable. When the temperature reached 45 F, the must was inoculated with two different yeast stains. The must was hand punched down everyday until the desired level of tannins was reached. The must was then hand pressed with the resulting wine going into 100% new small French oak barrels. The wine was barrel aged for 26 months with five rackings and the final blend was bottled unfined and unfiltered
. The wine is only pumped two times, once from the press to the barrels and from the blend tank to the bottler. All other movement is either gravity or under nitrogen gas pressure. The delicate treatment preserves the fine structure of this wine.
