Variety: 85% New York State Chambourcin, 15% 151 proof Oregon Brandy

Description: This is Blacksmiths' classic ruby port, with fresh flavors of plum, prune, raisin and cherry. Ours is a lighter style port than you might be accustomed to, although it's hearty enough to stand up to dark chocolate deserts, Stilton and other blue cheeses and of course, the classic port food pairing, walnuts.

Vinification: The grapes are contract hot pressed in New York, chilled to 28 F, and delivered to the winery. When the temperature reaches 45 F, the must is inoculated with yeast.




When the must ferments to the desired sweetness level, the brandy is added and fermentation ceased. The wine is then fined, filtered, cold stabilized and bottled.

2006 Update: The new vintage of Casco Port released in March 2007 was produced using Sangiovese from Washington. This grape will add complexity to the wine while enhancing the fruit flavors of the wine. Supplies will be limited with only 190 cases produced.
